Welcome to the insanity.

I got a niece that lives in Sugarland, we were out there for her wedding last June. Nice area, but y'all can keep that humidity!

Best BBQ I've ever eaten was at Killens's over in Pearland.

We have another Cotep member that's from Houston, Cody302, real cool guy, I shot with him in June.

If you come back head to the hill country. BBQ is all about personal taste, and the hill country doesn't add sauce/syrup. All about salt, pepper, heat and meat which is my preference.

They say you will get used to the humidity. I am at 20yrs and waiting. I will let you know when it happens.

I agree 100%, S&P is all you need, sauce is a n as after thought. That's how I smoke my ribs and tri-tip!

You might want to Google Heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). Meat barbecued without sauce is loaded with them.
